Keropok Lekor is a popular Malay traditional snack. It is made from fish and sago flour and seasoned with salt and sugar.
Keropok Lekor is Dorothy’s family recipe. Her recipe does not use any artificial flavours, preservatives or baking powder. Combined with modern techology ( Commercial Oven, Packaging, etc) and hygienic handling (Factory Production, etc), customers could now enjoy the wonderful fish taste of Keropok Lekor without worries. The family operated their business from home since 2007 and expanded to a factory in 2010. Alap-Alap is currently Halal certified under the efforts of Arzeanti who is meticulous with the documentation and procedures.
Alap-alap is careful in choosing the correct ingredients for its Keropok. Only fish that meet the company’s standards are chosen for processing in their factory. According to Dorothy, the secret of making it dry and soft lies with her husband, who will adjust the oven temperature so the Bahulu is cooked for longer, making it drier without having to sun it. This achieves and maintains the softness/moistness for up to a month after packaging.
